ABOUT Vellai Kurma or White Kurma RECIPE

This is a typical Tamil Nadu recipe served in hotels with chappatis, poori etc. It is very simple yet very tasty.

Ingredients Serving: 4

  1. 2 cups mixed vegetables, carrots, cauliflower, potato, beans, peas
  2. 2 tsp oil
  3. To Grind: 1 tsp phoola chana dal, 2 tsp coconut, 4 cashews, 2 green chillies,1 tsp saunf, 1 inch cinnamon, 2 cloves,1 green cardamom
  4. 1 medium onion chopped
  5. 1 tsp shredded ginger
  6. 2 cloves garlic
  7. 1/2 tsp mustard and 1/2 tsp jeera
  8. 1/4 tsp Turmeric
  9. Salt
  10. Coriander and curry leaves

Instructions

  1. Take a cooker add oil, add mustard seeds, jeera and curry leaves.
  2. Add onions, ginger and garlic, fry till pink, add vegetables, turmeric, salt and fry for a while. Add water and close the cooker and cook till one whistle.
  3. After opening the cooker again, add the ground masala and cook for 2 minutes.
  4. Garnish with coriander leaves.
  5. Serve with dosa, poori and chapati.
