ladyfingers are had best when cooked fresh. Stuff with a tangy masala, deep-fry to crisp with peanuts, serve in raita or batter fry as pakoras, this finger is definitely an all-rounder!

Ingredients Serving: 4

  1. Lady finger/okra/bhindi-350 gm 
  2. gram flour 2 tbsp
  3. Rice flour-1 tbsp
  4. Carom seeds 1/3 tsp
  5. Red chilly pwd 1/2 tsp
  6. Dry mango pwd 1/2 tsp
  7. Cumin pwd 1/3 tsp
  8. Salt to taste
  9. Oil for fry

Instructions

  1. Wash the okra with water and wipe it with kitchen towel.
  2. Trim the top and tail of the okra, cut it into two equal parts, slice these parts into thin strips and remove the seeds.
  3. Put all the chopped okra in a big bowl, add gram flour, rice flour, carom seeds, turmeric powder, aamchur powder, red chilli powder, cumin powder and mix it properly with okra
  4. Add the salt just before frying and mix it properly.
  5. Heat sufficient oil in pan, put one okra in the hot oil to check the temperature of oil.
  6. Once the okra starts floating on the oil, it means oil is perfectly hot for frying.
  7. Put small portion of spice mixed okra in the hot oil and fry it.
  8. Fry the okra on medium-high flame for 2-3 minutes or till it turns golden and crispy.
  9. Take out on the kitchen towel to absorb extra oil from it.
  10. Repeat the same process for remaining spice mixed okra.
