Roast the sweet potatoes on direct fire
Roast them until becomes black from outside and soft from inside
Peel them , by dipping your hands in water everytime you take out the peel
When becomes cool then grate them in a bowl
The grated sweet potatoes
All the ingredients together
Add all the ingredients in a bowl like grated sweet potato , ginger green chillies , coriander , mace powder , elaichi powder , amchur powder , mint powder with sesame seeds and salt
Mix nicely with your hands and make it like a dough
Make equal sized balls from the dough
Now stuff the cheese sticks in each of the dates
Flatten each ball in your palm and place the date in the center
Cover it nicely from all the sides and with the help of little water give it a shape of a kebab
In this way prepare all the kebabs and stick each cashew halve on each kebab , by pressing it a little
Take some ghee for roasting
Grease a pan with some ghee
Place the kebabs in the hot pan
Roast them on low heat by turning them at regular intervals , until become light brown from all the sides
The kebabs are ready to serve
Muddle mint leaves , lime pieces , black salt for rose mint mojito
In a jug take out the mixture and add lime juice and rose syrup
Add chilled water
The rose mint mojito is ready
Arrange the kebabs in a platter , garnish with onion rings and chopped coriander , serve with rose mint mojito , green chutney , tomato sauce and lemon slice , sprinkle some chaat masala on top of the kebabs
