ABOUT Mango balushahi RECIPE

Infusing the favourite sweet balushahi with mango flavour takes its taste to more amazing levels.

Ingredients Serving: 10

  1. 2 cup flour
  2. 1/2 tsp baking soda
  3. 80 gm ghee
  4. 80 gm mango puree
  5. 2 cups sugar
  6. 1 Cup water
  7. 1/2 tsp saffron strands( soaked in water)
  8. 1/2 tsp Cardamom powder
  9. 1 tsp Lemon juice
  10. Pistachios,for garnish

Instructions

  1. Sieve flour and baking powder together.
  2. Add ghee and mango puree.
  3. Bring the flour mix to make a dough,do not over knead.
  4. Cover and keep the dough for 10-15 minutes.
  5. To make sugar syrup,take sugar and water in a pan.
  6. Keep stirring on low to medium flame.
  7. Add saffron, cardamom powder and lemon juice.
  8. Cook the syrup till it reaches one string consistency.
  9. Take oil in a big wok to fry balushahi.
  10. Roll the dough into a square and cut into two halves.
  11. Keep one piece over the other and roll into a square again.
  12. Repeat this process 5-6 times to make layers and then roll into a cylinder.
  13. Cut equal pieces from the cylinder .
  14. Roll each piece into spherical shapes and make a hole in the centre.
  15. Fry the balushahi on low flame till golden brown on all sides.
  16. Soak these in warm syrup for 5-10 minutes till they soak the syrup .
  17. Take out from syrup and let them cool.
  18. Garnish with pistachios and serve.
