Infusing the favourite sweet balushahi with mango flavour takes its taste to more amazing levels.

Sieve flour and baking powder together.
Add ghee and mango puree.
Bring the flour mix to make a dough,do not over knead.
Cover and keep the dough for 10-15 minutes.
To make sugar syrup,take sugar and water in a pan.
Keep stirring on low to medium flame.
Add saffron, cardamom powder and lemon juice.
Cook the syrup till it reaches one string consistency.
Take oil in a big wok to fry balushahi.
Roll the dough into a square and cut into two halves.
Keep one piece over the other and roll into a square again.
Repeat this process 5-6 times to make layers and then roll into a cylinder.
Cut equal pieces from the cylinder .
Roll each piece into spherical shapes and make a hole in the centre.
Fry the balushahi on low flame till golden brown on all sides.
Soak these in warm syrup for 5-10 minutes till they soak the syrup .
Take out from syrup and let them cool.
Garnish with pistachios and serve.
