Ingredients Serving: 4

  1. Ragi flour 1 cup.
  2. Dry roasted Sooji / Semolina Couscous .3/4 cup.
  3. Poha 1/2 cup.
  4. Cooked rice 1/2 cup
  5. Onion 1 chopped fine
  6. Cauliflower chopped fine 2 tablespoon
  7. Curd 2 tablespoon
  8. Beetroot boiled and chopped in very small cubes 1/2
  9. Carrot chopped fine 1 small
  10. Coriander leaves chopped 2 tablespoon
  11. Oil 2 tablespoon
  12. Musterd seeds 1/2 teaspoon
  13. Curry patta 4 to 5
  14. Urad daal 1 teaspoon
  15. Pomegranate seeds 1/4 cup.

Instructions

  1. Wash some Poha.
  2. Roast ragi flour for 2 minutes in ghee. Be careful not to roast on high heat.
  3. Boil 1 cup water. Add in semolina Couscous. Cover with lid and allow to fluff.
  4. If using semolina than add 1 1/2 cup water and cover it with lid.
  5. Heat 1 tbsp oil in a pan . Add mustard seeds. Once crackle add head dal.
  6. Fry till golden brown. Add onions, fry for a minute. Add chopped garlic.
  7. Add Cauliflower. Saute. Add carrot.
  8. Add salt and pepper.
  9. Add grated ginger . Turn off heat.
  10. Simultaneously add water to the ragi flour. Add Semolina .
  11. Add soaked Poha by squeezing out extra water.
  12. Add beetroot.
  13. Add cooked rice. Adjust the consistency.
  14. Add Vegetables. Adjust the taste.( Salt, pepper)
  15. Heat water in steamer.
  16. Grease Idli mould. Add Coriander leaves and Pomegranate seeds in batter.
  17. Pour the batter and steam Idlies.
  18. It will take 7 to 8 minutes.
  19. Apply little Ghee on each Dili by spreading with spoon. Serve with coriander chutney.
