ABOUT Instant Mexican Mix Veggies Pickle RECIPE

Today i tried this mixican mix veggies pickle by help of pintrest. Fresh veggies mixed with chilli flacks, oragano and lemon juice. We can store it in fridge for a week. Normally kids avoid to eat vegetables but they will love this tangy and spicy pickle. Taste is too good.

Ingredients Serving: 5

  1. Cauliflower florates 1 cup
  2. Diced carrot 1 cup
  3. Diced cucumber 1 cup
  4. Green chilli chopped 7-8
  5. Red chilli chopped 7-8
  6. Chopped green garlic 1/2 cup
  7. Chopped fresh coriander leaves 2 tbs
  8. Lemon 2
  9. Salt 1 tbs
  10. Chilli flacks 1 tbs
  11. Oregano 1/2 tbs
  12. Oil 2 tbs
  13. Hing 1/2 tsp

Instructions

  1. HEAT 2 TBS OLIVE OIL
  2. ADD 1/2 TSP HING IN HOT OIL THEN ADD 1 CUP CARROT AND 1 CUP FLORATES.
  3. ADD 7-8 CHOPPED GREEN CHILLI AND 7-8 RED CHILLI
  4. SAUTE FOR A MINUTE
  5. ADD 1 TBS SALT AND 1/2 TSP ORAGANO
  6. ADD 1 TBS CHILLI FLACKS AND ADD 1 CUP DICED CUCUMBER
  7. ADD LEMON JUICE AND SWITCH OFF GAS
  8. ADD 1/2 CUP CHOPPED GREEN GARLIC AND GIVE A GOOD MIX
  9. INSTANT VEGETABLES PICKLE IS READY
  10. ADD 2 TBS CHOPPED FRESH CORIANDER LEAVES BEFORE SERVING AND MIX IT .
