ABOUT Suji Cutlets RECIPE

This cutlet is easy to make and can be enjoyed as evening snack with cup of tea.It is made of suji /semolina ,potatoes and spices,then shallow fried.

Ingredients Serving: 4

  1. Semolina/suji -1 cup
  2. Boiled potato -1
  3. Water 2 cup
  4. Rice flour/corn flour -2 tbsp
  5. Oil 1 tbsp
  6. Green chilli -1
  7. Grated ginger 1 tsp
  8. Corriander leaves 2-3 tsp
  9. Salt 1 tsp
  10. Carrom seeds/ajwain 1tsp
  11. Turmeric powder-1 /2 tsp
  12. Chat masala 1 tsp
  13. Cumin/jeera powder 1 tsp
  14. Red chilli 1/2 tsp
  15. Oil for frying

Instructions

  1. BOIL 2 CUPS WATER, ADD 1 TSP CAROM SEEDS, 1/2 TSP SALT
  2. ADD 1 TBSP OIL, 1 CUP SEMOLINA, STIR IN
  3. STIR CONTINUOUSLY FOR A FEW SECONDS TO AVOID LUMPS
  4. COOK UNTIL THICK LIKE THIS, ALLOW IT TO COOL
  5. KNEAD THE COOLED MIX
  6. ADD 1 BOILED & MASHED POTATO
  7. ADD 1 CHOPPED GREEN CHILLI, 1 TSP GRATED GINGER
  8. ADDB1 TSP EACH OF ROASTED CUMIN POWDER, CHAT MASALA, SALT & TURMERIC
  9. ADD RED CHILLI POWDER TO TASTE, 2 TBSP RICE FLOUR / CORNFLOUR, MIX WELL
  10. ADD 2 TBSP CHOPPED CORIANDER LEAVES
  11. GREASE YOUR PALMS WITH SOME OIL, MIX WELL
  12. ADD TO AN OIL-GREASED TIN
  13. TAP LIGHTLY & LEVEL IT WELL, REFRIGERATE FOR 20 MINS
  14. NOW CUT OUT DESIRED SHAPES FROM THE SET MIXTURE
  15. CUT OUT ALL THE PIECES, LOOK AT HOW NEAT THEY LOOK
  16. SHALLOW FRY IN HOT OIL IN A NONSTICK PAN
  17. FLIP & FRY FROM BOTH SIDES ON LOW-MEDIUM HEAT
  18. TURN & COOK FROM THE SIDES TOO
  19. TAKE OFF HEAT WHEN GOLDEN BROWN & CRISP, SERVE HOT WITH KETCHUP
