ABOUT Achari paneer tikka kulcha RECIPE

This is very unique combination of achari paneer tikka and kulcha and stuffed with cheese in the centre.ln this recipe I used Gowardhan curd and Rambandhu ka achar masala. Gowardhan curd is very rich and thick curd which is gud for tikka marination. Rambandhu ka achar masala gives the unique flavours of all spices to the tikka.

Ingredients Serving: 2

  1. 1. Maida - 1 cup
  2. 2. Curd - 1/4 cup( for kulcha)
  3. 3. Baking powder - 1/2 tsp
  4. 4. Beetroot juice - 1/2 cup
  5. 5. Paneer - 100 gm
  6. 6. Capsicum - 1
  7. 7. Onion - 1
  8. 8. Curd - 1/4 cup
  9. 9. Ginger garlic paste - 1/2 tsp
  10. 10. Dhaniya powder - 1tsp
  11. 11.red chilli powder -1 tsp
  12. 12. Rambandhu achar ka masala - 1/2 tsp
  13. 13. Mustard oil - 1/4 cup
  14. 14. Salt as per taste
  15. 15. Cheese slice one
  16. 16. Lemon juice - 3-4 drops

Instructions

  1. ARRANGE ALL THE INGREDIENTS.
  2. TAKE THE REFINED FLOUR INTO A BOWL AND ADD SALT AND BAKING POWDER INTO IT.
  3. NOW ADD CURD.
  4. THEN POUR BEETROOT JUICE.
  5. NOW MIX ALL INGREDIENTS WELL.
  6. KNEAD THE DOUGH PROPERLY.
  7. DOUGH IS READY.
  8. SEE IT BOUNCE BACK MEANS DOUGH IS WELL KNEADED.
  9. COVER THE DOUGH.
  10. KEEP IT AT WARM PLACE FOR 2 TO 3 HR.
  11. NOW START MAKING ACHARI PANEER TIKKA.
  12. TAKE CURD IN BOWL.
  13. ADD GINGER GARLIC PASTE AND DHANIYA POWDER TO THE CURD.
  14. ADD RED CHILI POWDER.
  15. MIX IT WELL.
  16. THEN ADD RAM BANDHU KA ACHAR KA MASALA.
  17. ADD SALT.
  18. ADD SOME CORNFLOUR TO THE CURD MIX.
  19. ADD LEMON JUICE 3 TO 4 DROPS.
  20. PUT SOME MUSTARD OIL TO IT AND MIX IT.
  21. NOW ADD PANEER , CAPSICUM AND ONIONS CUBES.
  22. NOW FOLD IT PROPERLY IN CURD MIXTURE.
  23. COVER IT AND KEEP IT FOR 30 MIN.
  24. AFTER 30 MIN START MAKING ACHARI PANEER TIKKA.
  25. PLACE MARINATED PANEER, CAPSICUM AND ONIONS ON HEATED TAVA.
  26. COOK THEM FROM BOTH SIDES USIG MUSTARD OIL.
  27. SEE HOW IT LOOKS AFTER COOKING.
  28. NOW KEEP ACHARI PANEER TIKKA IN A BOWL.
  29. NOW TAKE OUT THE DOUGH.
  30. PREHEAT THE KADAHI.
  31. NOW ROLL THE ONE KULCHA DOUGH
  32. APPLY SOME DESI GHEE ALL OVER .
  33. SPRINKLE SOME FLOUR AND FOLD IT.
  34. FOLD IT LIKE THIS.
  35. ROLL IT AGAIN.
  36. PLACE SOME CHEESE SLICE IN THE CENTRE.
  37. SPRINKLE SOME RED CHILI FLAKES.
  38. NOW COVER IT WITH ANOTHER KULCH SHEET.
  39. SEAL IT PROPERLY.
  40. NOW PLACE ACHARI PANEER TIKKA AT EDGE OF KULCHA.
  41. NOW COVER IT LIKE THIS.
  42. NOW OUR ACHARI PANEER TIKKA KULCHA IS READY TO BAKE.
  43. PALCE IT IN THE KADAI AND COVER WITH LID.
  44. AFTER SOME TIME APPLY SOME GHEE ON TO IT AND BAKE IT FOR 25 TO 30 MINS.
  45. OUR ACHARI PANEER TIKKA IS READY TO SERVE.
  46. CUT IT INTO SLICE AND HAVE CRISPY AND CRUNCHY FROM OUT SIDE AND CHEESEY FROM INSIDE KULCHA.
  47. SEE THE LAYERS OF KULCHA.
