  1. 1/2 liter Milk for chena
  2. 1 Tablespoon Lemon juice
  3. 1 litre milk for Malai /Rabdi
  4. 1/4 cup sugar
  5. 1/4 teaspoon of elaichi powder
  6. Few saffrons
  7. Few Pistachio
  8. Sugar syrup -4-5 cups water and 1/2 cup sugar

Instructions

  1. ADD 1/2 LITER MILK AND KEEP IT TO BOIL
  2. AS SOON AS IT BOILS, ADD 1 TABLESPOON LEMON JUICE
  3. NOW THE MILK HAS BEEN CURDLED
  4. TAKE A THIN CLOTH AND DRAIN THE WATER
  5. REMOVE THE EXCESS WATER
  6. WASH WITH FRESH WATER
  7. SQUEEZE AGAIN
  8. MAKE A TIGHT KNOT OVER IT KEEPASIDE
  9. ADD 1/2 CUP SUGAR
  10. ADD 4 CUPS OF WATER
  11. KNEAD THE CHENNA NOW START KNEADING FOR 5-6 MINUTES
  12. SOFT DOUGH IS READY
  13. MAKE A SMALL ROUNDLES OF THE CHENNA
  14. NOW BOIL THE SUGAR WATER SO ADD THE CHENA BALLS SLOWLY
  15. NOW COVER THE LID AND PUT THE GAS ON MID FLAME
  16. LET IT COOK FOR 15-20 MINUTES
  17. AFTER 20 MINUTES THEY EXPANDED IN SIZE
  18. YOU CAN SEE THAT RASAGULLAS ARE READY
  19. WILL REMOVE THE SUGAR SYRUP
  20. BOIL THE MILK FOR MALAI
  21. ADD 1/4 TEASPOON OF ELACHIPOWDER
  22. BOIL THE MILK, MAKE THE MILK THICK LET IT BOIL ON MEDIUM FLAME.
  23. ADD 1/4 CUP SUGAR
  24. MIX WELL
  25. ASS SOON ASIA REDUCE 6-7 MINUTES, KEEP STIRRING
  26. ADD SAFFRON
  27. MIX THE SAFFRON
  28. DO NOT MAKE IT TOO THICK
  29. SWITCH OFF THE FLAME
  30. PUT THE RASGULLAS SLOWLY
  31. AGAIN LET IT COOK FOR 3-4 MINUTES
  32. TILL IT SOAKS IN THE MILK AND ABSORBS THE MILK FLAVOR AND SWITCH OFF THE FLAME
  33. NOW ANGOORI RASMALAI IS READY TO SERVE
  34. GARNISH IT WITH PISTACHIOS AND SOME SAFFRONS
  35. YOU CAN SERVE IT CHILLED OR IN ROOM TEMPERATURE
