Ingredients Serving: 3

  1. 3 ripened medium size tomatoes
  2. 1 cup water
  3. 1 cup sugar
  4. 1/2 bay leaves
  5. Ghee/ Oil - to fry the tomatoes
  6. 3/4 tsp cardamom powder
  7. 1/4 tsp cumin seed powder

Instructions

  1. In a pan or kadhai, bring water to boil.
  2. Add bay leaves,cumin seed powder, cardamom powder and sugar to make a thick sugar syrup. Keep stirring until the water starts to become sticky.
  3. Remove the syrup from fire and keep it aside.
  4. In another pan, add some ghee or oil in it and heat it. Shallow fry the whole uncut tomatoes. (Be careful while frying the tomatoes as it might splutter due to the moisture present in it.)
  5. Make sure the tomatoes do not break while frying. Fry it until the skin gets shrunk.
  6. After they are fried, remove it from the oil and prick them with fork so that the tomatoes get soaked well in the syrup.
  7. Now add them into the sugar syrup, let it boil for 2 mins and serve it once it cools.
