ABOUT Arabian kabsa RECIPE

Arabian style al kabsa recipe prepared with basmati rice, meat and simmered in tomato puree

Ingredients Serving: 4

  1. 1 kg Chicken
  2. 1/2 kg basmati rice
  3. 1 large Onion, chopped
  4. 60ml tomato puree
  5. 3 medium tomatoes, chopped
  6. 3 carrots, grated
  7. 6 garlic cloves, minced
  8. 2 cloves
  9. 1+1/2 tsp black pepper powder
  10. 4 tbsp Toasted almonds,
  11. 2 tbsp Raisins
  12. 1 tsp Arabian all spice powder
  13. 1/4 tsp white pepper powder
  14. 1/4 tsp dry lime powder
  15. 1/4 tsp saffron
  16. 100gms butter
  17. Salt to taste

Instructions

  1. Melt butter in a pan. Add garlic, onion, chicken and fry till the onion become tender. Add tomato puree and cook in a slow fire for 2 to 3 minutes.
  2. Add tomatoes, carrots, cloves, all the spices, salt and pepper. Cook for 3 to 4 minutes in slow fire.
  3. Add 800 ml water, bring to boil. Add basmati rice, raisins and mix well. Pressure cook for 10 minutes.
  4. Remove from heat and place in a large serving dish topped with chicken and garnished with almonds.
  5. Serve hot.
