Ingredients Serving: 2

  1. Bhindi / Ladiesfinger - 5 cup, chopped
  2. Curry leaves - few
  3. Salt to taste
  4. Oil - 2 tbsp
  5. Masala :
  6. Coconut , fresh - 1/2 cup
  7. Methi seeds - 1/4 tsp
  8. Red chillies whole - 2 or 4 (adjust as per tate)
  9. Coriander seeds - 1/2 tsp
  10. Blackgram - 1 tsp
  11. Jaggery - a small piece
  12. Tamrind paste or puree - 1 tsp (for paste 1/2 tsp)
  13. Mustard seeds - 1/2 tsp

Instructions

  1. In a large pan add oil and bendekayi fry till cooked
  2. In a seperate small pan, heat and add all seeds(methi,coriander,blackgram,mustard seeds and red chillies) sligtly roast them
  3. In a mixer add coconut , jaggery, tamarind and mix roasted ingredients add water and blend into a smooth puree
  4. In a bhindi pan add masala into it stir add water (if required) , add salt Stir and bring into boil
  5. Sprinkle curry leaves and serve with white rice
