ABOUT Vegetarian pannacotta RECIPE

Ingredients Serving: 4

  1. 1/2 litre Full Cream Milk
  2. 10 gms china grass/ agar agar
  3. 1 Cup water
  4. 2 tbsp condensed milk (milkmaid)
  5. 4 tbsp sugar (or to taste)
  6. For the strawberry puree
  7. 8 to 10 strawberries
  8. 2 tbsp sugar (or as needed)
  9. Pomegranate seeds for garnish
  10. Mint leaves for garnish

Instructions

  1. Wash and soak the china grass in water for about 10 minutes. Then drain the excess water and grind the china grass to a fine paste. Transfer to a bowl and keep ready.
  2. Remove the leaves from the strawberries and grind the strawberries along with 2 tbsp sugar to a fine puree. Do not add water.
  3. You can add more or less sugar depending on the sweetness of the strawberries.
  4. Transfer the strawberry puree to a small container and refrigerate till you are ready to serve.
  5. Boil milk in a pan and bring to a boil, reduce the heat and cook for about 10 minutes in low flame.
  6. Meanwhile cook the china grass with 1 cup of water in another pan till it completely dissolves.
  7. Then add sugar to this and cook for a couple of minutes.
  8. Remove the agar agar mix from flame and add milk and condensed milk. Mix well and check for taste. Add more sugar if necessary and give a quick mix.
  9. Pour the milk-agar agar mix into small muffin moulds or any bowls or cups of your choice.
  10. Allow it to cool down completely. The liquid will solidify on reaching room temperature.
  11. Refrigerate for at least 3 to 4 hours and de-mould the pannacotta onto small plates.
  12. Pour the strawberry puree on top and garnish with mint leaves and pomegranate seeds.
  13. Your vegetarian pannacotta with ingredients available in every Indian home is ready to be served.
