ABOUT SHAKARKANDI GALLETTE RECIPE

Shakarkandi used in a gallette as filling and that to a healthier version made up of whole wheat flour and brown sugar.

Ingredients Serving: 4

  1. 1cup whole wheat flour
  2. 7tbs cold unsalted butter
  3. Salt a pinch
  4. 1tsp powdered brown sugar
  5. 5tbs ice cold water
  6. 2medium size sweet potatoes
  7. 1tsp cornflour
  8. 2tbs granulated brown sugar
  9. 2tsp milk

Instructions

  1. Half boil sweet potatoes with a little water, then peel and slice.
  2. Add half of the granulated sugar, cornflour to this, toss and keep aside.
  3. Coat and rub the butter in flour, add salt, powder sugar, water and bind together, don't knead.
  4. Cling wrap the dough and rest in refrigerator for minimum 30 minutes.
  5. Take it out, roll with the help of a little flour in to a chapati of 1/4 inch thickness.
  6. Keep filling in center, a little away from edges from all sides.
  7. Fold edges over, give a pleated design, fruit in centre will be exposed.
  8. Sprinkle the rest half granulated sugar to the top and the folded edges.
  9. Give a milk wash.
  10. Place on a parchment paper lined in a baking tray.
  11. Bake in a pre heated oven at 200 degree for 35 mins.
  12. Serve warm.
