ABOUT My Mumma's style Maggie! RECIPE

Initially when Maggie was available only as a packet which had instant noodles and the masala sachet in it. My mumma tried making it interesting by adding vegetables and other seasonings which took Maggie to another level and me and my friends used to love that way. Now that i have become a mother to a 4.5 year girl who loves all food that is interesting and tempting. I make my Mumma's style Maggie for her and she loves it. This noodles are made using atta noodles packet. Hope you all like it!

Ingredients Serving: 4

  1. 2 packets of vegetable atta noodles
  2. 1/4 cup carrots cut into big juliennes
  3. 1/4 cup cauliflower florets cut in bigger size a bit
  4. 1/4 cup green peas
  5. 1/4 cup cabbage cut into big juliennes
  6. 1/2 cup of red, yellow and green bell peppers cut into big juliennes
  7. One big Onion cut into long pieces
  8. Puree of 3 medium size tomatoes
  9. 2 tbsp paste of ginger garlic and green chillies
  10. One packet of Maggie masala
  11. 1 tbsp soya sauce
  12. 2 tsp Red chilli sauce
  13. 3 tbsp of tomato ketchup
  14. 1 tsp of sugar
  15. Salt to taste
  16. 3 cups of water to boil Maggie
  17. For Tempering:
  18. 2 tbsp Oil
  19. 1/2 bay leaf
  20. 6-7 curry leaves
  21. 4-5 black peppers
  22. 1/2 tsp jeera [cumin seeds]
  23. 1/2 tsp rai dana [mustard seeds]
  24. 1" long piece of cinnamon stick

Instructions

  1. Cut the vegetables
  2. In a non-stick pan put all the ingredients of tempering and heat it.
  3. After rai dana starts crackling and the cut vegetables and the ginger, garlic and green chilli paste.
  4. Cover it with a lid and cook till vegetables are almost done.
  5. Meanwhile boil water and cook Maggi noodles in it.
  6. After the vegetables are cooked add the sauces in the pan.
  7. Add salt to taste. Add sugar also
  8. Mix everything properly and add cooked Maggie to it! Cook for sometime and serve it.
