Ingredients Serving: 4

  1. For Dhokla:
  2. 1 cup Dhokla-hadhva flour( rice and tuvar dal flour mix)
  3. 2 tbsp each Besan flour & Semolina (ravo)
  4. 2 tbsp each Rice flour & Fruit salt (Eno)
  5. 1/2 cup + 2 tbsp Yogurt
  6. 1/4 cup Water
  7. Some red chili powder & chopped cilantro
  8. For the stuffing:
  9. 1 tbsp Oil
  10. 1/2 tsp each Cumin seeds &Turmeric powder
  11. 1 tsp each Urad dal & Sugar powder
  12. 4-5 Curry leaves (Limdo)
  13. 1 tbsp Red chili powder paste (Red chili mix with some water)
  14. 1/4 tsp each Garam masala & Chaat masala
  15. Some chopped cilantro
  16. A pinch of Asafoetida
  17. For Chutney:
  18. 1 teaspoon Oil
  19. 1/4 tsp each Cumin seeds & Garam masala
  20. 3 tsp Aamchur powder
  21. 1 tbsp Jaggery (gur)
  22. 1/4 tsp each Black salt & Dhania-jeera
  23. Some Chaat masala & mint powder (optional)
  24. To serve:
  25. Some chopped cilantro
  26. Some grated cheese or paneer (optional)
  27. Salt to taste

Instructions

  1. Chutney: heat oil in a pan, add cumin seeds. Once it crackles, add water, red chili pwd, aamchur pwd, garam masala, salt, jaggery, black salt, chaat masala and mint pwd.
  2. Cook till its boiled and gets a little thick consistency. Remove and keep aside.
  3. Stuffing: heat oil in a pan, add cumin seeds and urad dal, cook for 2 mins. Add chopped curry leaves, red chili pwd paste, turmeric pwd and asafoetida.
  4. Cook for 1 min, add boiled and grated potatoes, mix well. Add garam masala, salt, sugar, chaat masala and chopped cilantro.
  5. Mix well for 2 mins, turn off the stove. Let it cool down.
  6. Dhokla: add dhokla-hadhva flour, besan flour, semolina, rice flour, yogurt and water in a blender, mix to get a smooth batter. Pour batter in a bowl, let it rest for 15-20 mins.
  7. Add eno in batter with 1 tbsp water,stir it briskly and quickly.
  8. Pour little amount of batter in the greased pan. Place pan in a dhokla steamer, steam for 5-7 mins.
  9. Take it out from the pan, spread stuffing over on the dhokla evenly. Pour little of dhokla batter on the stuffing. Sprinkle red chilli pwd and chopped cilantro.
  10. Put it again into the steamer, steam for 10-12 mins. Take it out in a serving plate after.
  11. Prick the dhokla with a knife, apply the chutney over the dhokla.
  12. Garnish with chopped cilantro and grated cheese or paneer. Cut and serve!
