ABOUT Carrot Falafel burger with Beetroot Hummus RECIPE

Falafel is middle eastern food which is been prepared using soaked chickpeas seasoned with some spices and deep fried. Served hot with hummus. This is fusion burger prepared using carrot falafel, salad, beetroot hummus and Mayonnaise.

Ingredients Serving: 2

  1. Beetroot Hummus - Boiled Chickpeas – ½ cup
  2. Cooked Beetroot – ½ cup
  3. Tahini Sauce – 1 tbsp
  4. Lemon juice – 2 tsp
  5. Garlic clove – 2-3
  6. Roasted cumin powder – 1 tsp
  7. Freshly ground black pepper corns – 1 tsp
  8. Olive oil or any vegetable oil- 1/2 tbsp
  9. Salt to taste
  10. For Carrot Falafel – Chickpeas/Kabuli Chana - ½ cup (soaked overnight)
  11. Grated and squeezed carrot – ¼ cup tightly packed
  12. Garlic cloves - 2
  13. Freshly ground Black Peppercorns – 1tsp
  14. Coarsely Ground Cumin Seeds – ½ tsp
  15. Coarsely Ground Coriander Seeds – ½ tsp
  16. Onion - ½ small finely chopped
  17. Finely chopped coriander leaves - handful. Or 1/2 cup
  18. Corn flour – ½ tbsp
  19. Baking Soda – ¼ tsp
  20. Salt to taste
  21. White sesame seeds – 2tbsp for rolling
  22. Oil – 2 cups for frying
  23. For burgers – 2 burgers
  24. Butter – 2-3tbsp
  25. Veg Mayonnaise – 2 tbsp (I used funfoods veg Mayo Burger spread)
  26. For Veg Salad – Finely chopped onion – 1tbsp
  27. Grated carrot – 2tbsp
  28. Grated or finely chopped cabbage – 2tbsp
  29. Finely chopped red capsicum – 1 tbsp
  30. Red chilli flakes – ½ tsp
  31. Freshly ground Black Peppercorns – ½ tsp
  32. Salt to taste.
  33. Veg Mayonnaise – 1 ½ tbsp
  34. Lettuce leaves – 1
  35. for serving - Veg salad, Hummus

Instructions

  1. Beetroot Hummus – Add all ingredients into blender. Blend it into a smooth paste.
  2. Blend all 11 ingredients into blender until rough paste. Scoop into a bowl.
  3. Divide it into 9-10 equal part and make a small tikkies or cutlets. Refrigerate for 10-15 minutes
  4. Roll them into a white sesame seeds.
  5. Heat oil in a wok or kadai. Fry falafels on low medium flame until crisp and golden brown from both the sides.
  6. 5. For Veg Salad - In a bowl mix finely shredded cabbage, grated Carrot, finely chopped red capsicum, onion, ground black pepper corns, red chilli flakes, salt and veg Mayonnaise. Mix well until it combined.
  7. Assembling – Cut the burger buns horizontally into two. Apply butter on insides of each half. Toast them on nonstick pan.
  8. Spread some burger veg mayonnaise evenly on one part of sliced burger and beetroot hummus on other one.
  9. Top the burger base with one lettuce leaf, place hot 4-5 prepared falafels.
  10. Spread 2-3 tbsp. prepared veg salad. Cover with another burger slice on which hummus is been spread.
  11. Garnish with grated carrot, shredded cabbage and beetroot hummus. Serve hot.
