ABOUT LIQUOR FILLED CHOCOLATES RECIPE

Special Occasions call for Special Celebrations, and what better way to Celebrate than with Chocolates... and of course BOOZE... (How can I forget ?). The moment you bite these, you'll hear a crackling sound and feel a gush of Booze in your mouth... I made an assorted set of chocolates with Dark Rum, Scotch and Vodka but you can use any liquor you prefer. Here is how you can also make these at home.

Ingredients Serving: 10

  1. Dark Chocolate Slab
  2. Granulated Sugar
  3. Unsalted Butter
  4. Confectionary Fondant
  5. Liquor of your choice
  6. Vegetable oil / Canola oil
  7. Water

Instructions

  1. Prepare chocolate shells in moulds which will provide a stable vessel. Do not use moulds with a rounded base. Set aside
  2. Combine Sugar and water in the ratio 3:2 and bring them to a boil till all the sugar has dissolved. Let it cool to room temperature.
  3. Mix the sugar syrup and the liquor in the ratio of 2:3. i.e 2 parts sugar syrup with 3 parts of liquor.
  4. Fill the chocolate shells with liquor syrup till 3/4th of the shell. Ensure there is no dripping on the edges.
  5. Mix equal quantity of butter and fondant and warm the mixture to make it very runny.
  6. Pipe a thin layer of the fondant mixture over the liquor syrup in the shells, which will automatically float to the surface. Allow to firm at room temperature. This will take about 1-2 mins.
  7. Now take melted chocolate mixed with about 10% - 15% vegetable oil or Canola Oil in a piping bag and seal the chocolate shells completely. Ensure the chocolate is fully sealed and there are no gaps, else the liquor will ooze out
  8. Refrigerate till the chocolate is set. and Enjoy the gush of liquor in your mouth!!
