ABOUT Gingersnap Truffles RECIPE

A rich and chocolate truffles made with only three ingredients.

Ingredients Serving: 10

  1. 35 to 40 Gingersnap cookies (homemade or store bought)
  2. 1 package of cream cheese at room temperature
  3. 175 gm semisweet chocolate chips

Instructions

  1. In a food processor pulse the gingersnap cookies, turn into a fine powder.
  2. Add the softened cream cheese and process again a few times until the mixture becomes crumbled. Make small balls using a tablespoon of dough at a time.
  3. Place the cookie balls in the refrigerator for 2 hours or until ready to use.
  4. Line a baking sheet with parchment paper.
  5. Melt the chocolate in the microwave for 1 minute or using the double boiler method. Using a skewer or spoon dip each cookie ball one by one in melted chocolate and arrange them on the baking sheet.
  6. Place the truffle in the refrigerator again to set the chocolate for at least 2 hours.
