Colourful Parantha Bites with Sweet potato and salsa filling

ABOUT Colourful Parantha Bites with Sweet potato and salsa filling RECIPE

Easy and fast to make, this can be whipped up at moments notice. Tastes equally good.

Ingredients Serving: 4

  1. Whole wheat - 85 GMs
  2. Oats flour - 85 GMs
  3. Beetroot/ carrot/ spinach (boiled and puréed with max 1-2 tsp water - 55 GMs
  4. Oil- 10 ml
  5. Oil Spray can - as needed
  6. Salt-a pinch
  7. For the filling:
  8. Sweet potato- 1
  9. Onion (finely chopped) - 1
  10. Tomato (deseeded and finely chopped)- we will use some of the fresh juice from them as well - 1
  11. Coriander (finely chopped) - 1/4th cup
  12. Lime juice - of half a lemon
  13. A pinch of salt and sugar if needed.

Instructions

  1. Add salt to the flour and Make a dough by first rubbing the oil into the flour to get it crumbly make sure the oil is mixed with the entire flour.
  2. Add the purée (that's being used at that point) and make a medium soft dough.
  3. Rest for ten minutes.
  4. Roll out on a clean surface and cut into discs using a round cookie cutter and cook it on the tava like a parantha.
  5. Mix all the ingredients mentioned under 'For the filling:' in a bowl.
  6. Put the filling in the Colourful paranthas, roll it up and hold and bind it with a toothpick and serve.
