ABOUT South Indian Vegetable Sambar... RECIPE

An authentic South Indian Sambar that goes well with Idlis and Dosas. It is the most loved side dishes that are a must with South Indian breakfast items. Vegetables make it more healthy and pressure cooker makes the job much more easier as well. Tastes yummy even with plain rice and poppadums. This is personally my favourite with plain boiled rice.

Ingredients Serving: 8

  1. Pigeon pea lentils or toor dal 1 1/2 cups
  2. Ginger garlic paste 1 tsp
  3. Onion chopped 1
  4. Veggies like drumsticks cut into pieces 1 cup
  5. Brinjals cut lengthwise 1 cup
  6. Okra cut into pieces 1 cup
  7. French beans cut lengthwise 1 cup
  8. Cauliflower florets 1 cup
  9. Capsicum cubed 1 cup
  10. Tamarind pulp 1/2 cup
  11. Sambar masala 2 tbsp
  12. Turmeric 1 tsp
  13. FOR THE TEMPERING ; Oil 3 tbsp
  14. Black mustard seeds 1 tbsp
  15. Curry leaves 1/4th cup
  16. Salt 1 tbsp
  17. Garlic cloves 3 to 4
  18. Dry red chillies 3 to 4
  19. Onion sliced 1

Instructions

  1. Pressure cook dal along with turmeric and ginger garlic paste.
  2. Mash the dal well and add veegerables to this.
  3. Add the rest of the spices and pressure cook again for 3 whistles.
  4. Let the pressure settle down.
  5. Open the lid and add one fourth of the tamarind pulp mixed with a cup of water.
  6. Simmer on medium flame and adjust the consistency by adding some hot water if needed.
  7. After done, heat oil in a pan.
  8. Add mustard seeds and curry leaves.
  9. Also add red chillies.
  10. And garlic cloves too.
  11. Add this tempering to the sambar.
  12. I also add 1 sliced onion to the tempering.
  13. It is optional. You may or may not add it.
  14. Serve this quick vegetable sambar with idlis and dosas or even plain rice.
