ABOUT Banana Honey Loaf Trifle RECIPE

A simple and low fat dessert. This is a completely eggless dish, made from crumbled banana, honey loaf, frozen bananas and jam. The recipe for the banana honey loaf has been inspired from Gayathri's cookspot.

Ingredients Serving: 5

  1. For the eggless banana wheat loaf::
  2. Wheat Flour-1cup
  3. Maida - 1/8 cup
  4. Baking Powder-1 teaspoon
  5. Salt-1/4 teaspoon
  6. Butter - 6 tablespoon
  7. Powdered sugar - 1/3 cup
  8. Honey - 1/4 cup
  9. Vanilla essence - 1 teaspoon
  10. Bananas mashed - 1/2 cup
  11. Baking soda - 1/4 teaspoon
  12. Milk - 1/2 cup+ 1/2 teaspoon Vinegar
  13. For the other layers::
  14. Simple sugar syrup - 1/2 cup
  15. 4-5 Frozen bananas (keep bananas in the freezer in a ziplock bag for 5 hours)
  16. Jam (I used mixed fruit)- 2 tablespoon

Instructions

  1. To bake the banana loaf, start by beating the butter with an electric beater till it is fluffy. Then add in the sugar and honey and beat once again.
  2. Mash the bananas and add baking soda into it. Whisk this mixture until it is frothy. Now, add the frothy banana into the butter mixture and whisk it well. (If the mixture seems curdled it is okay.)
  3. Sift together the flour, wheat flour, salt and baking powder in a bowl separately. Add milk and vinegar in a separate bowl.
  4. Add the milk mixture and flour mixture alternately into the butter mixture and fold the batter. Do not over mix.
  5. Preheat the oven to 175 degrees C. Grease a loaf pan with butter and pour in the thick batter and level the top smoothly.
  6. Bake this for 20- 25 minutes till the toothpick comes out clean when inserted in the centre. Invert and cool in wire rack.
  7. To prepare the simple sugar syrup, in a pan, add some sugar and some water just to cover the sugar and let it boil for 4 to 5 minutes. Then turn it off. Blend the frozen bananas in a blender till its creamy.
  8. For assembling, take your glasses, crumble some loaf into the bottom. Next drizzle in some sugar syrup. Then add the blended creamy bananas, again some crumbled loaf with a little sugar syrup and blended bananas.
  9. Top the upper layer with some jam. Add nuts or chocolate on top. Chill for some time and serve!
