The cottage cheese gets a complete green makeover, with basil oil, the peas puree , cured green tomato, red raddishes, green pickled amla and the basil ash, a complete charmer with robust flavours.

Ingredients Serving: 2
100 gms green peas
2 green tomato sliced
200 g cottage cheese
1 amla sliced
200 gms basil
100 ml olive oil
Salt to taste
Lime juice 1 tsp
10 gm crushed rock salt
2 crushed cloves
1 green chili
1 tbsp chopped cilantro
1 tbsp castor sugar
25 gms amul butter
Instructions
Clean 50 gms basil leaves and pat dry. Add them in an airfryer to dehydrate at 40 degrees for 45 mins to create ash
Pressure cook peas, green chili, cilantro, pinch of salt over low flame for 3 whistles. Blend mixture and sieve through a strainer
Add 150 gms of basil to the boiling water for 5-7 mins and remove, squeeze out all the water from the basil. Blend basil and olive oil. Double strain mixture through a muslin cloth to get just green basil oil.
Add the slices of green tomatoes in a jar, add the rock salt, cloves and set aside for 30 mins
Take amla slices and rub them with castor sugar and wash after 15 mins.
Slice the radishes and mix them with lime juice and salt
Cut cottage cheese into length, now rub the dehydrated basil on your palms to get ash, mix some salt to ash, roll the cottage cheese over the ash to get even coating. Heat butter in a non stick pan and shallow fry the cottage cheese on all sides.
