ABOUT Cheesy Spinach Fried Eggplants RECIPE

Egg plants marinated, fried and served on a bed of Spinach.

Ingredients Serving: 3

  1. Spinach - 500 grams
  2. Large sized Onions 2 , chopped
  3. Tomatoes 2 , pureed
  4. Brinjals 300 - 350 grams
  5. Garlic crushed 1 tbsp
  6. Ginger grated 1 tsp
  7. Cumin powder 1 tbsp
  8. Garam masala 1 tsp.
  9. Butter 2 tbsp
  10. Salt 2 tsp
  11. Pepper 1/2 tsp
  12. Turmeric 1/2 tsp
  13. Cheese. 3 cubes grated
  14. Oil for shallow frying.

Instructions

  1. Slice Brinjals in roundels . Marinate Brinjal roundels with salt, pepper, Turmeric and keep it aside
  2. Blanch Spinach and blend to smooth puree
  3. Heat oil in a non-stick pan and shallow fry Brinjals until golden brown and crispy. Keep it aside
  4. Heat 1 tbsp butter in a pan, add finely chopped Onions , saute until translucent.
  5. Add garlic ,ginger and saute until raw aroma disappears
  6. Add cumin powder, garam masala and mix well
  7. Add Tomato puree, salt and Turmeric. Mix well. Cook until raw taste of tomatoes disappear
  8. Add spinach and butter. Mix well. cook for 2 minutes
  9. Now arrange Brinjal roundels on a serving plate.
  10. Add grated Cheese to the Spinach mix and pour over Brinjals.
  11. Serve it with bread, khakras etc
