Spinach polenta base pizza is one among many healthier dishes and you can have as many as you wish without any guilt. packed with nutrition , stomach filling ,and delicious as well . This can be morning breakfast or evening snacks and most importantly you dont have to do extra yoga or exercise next day . Ingredients Serving: 4

  1. 2 cups of corn meal
  2. 1 cup puree of blanched spinach
  3. 4 cups of water
  4. 2 tsp chili flakes
  5. 1 tsp oregano
  6. salt and pepper to taste
  7. 2 cups grated cheese
  8. 1 clove garlic
  9. sliced onion 3 tbsp
  10. sliced capsicum 3 tbsp
  11. sliced tomatoes without seeds 3 tbsp
  12. Grated broccoli 2 tbsp
  13. Pizza sauce 1/3 cup
  14. Olive oil 2 tsp

Instructions

  1. In a pan,add 4 cups of water and bring to boil
  2. Add chili flakes, oregano to water, then add corn meal and continuously stir the mixture throughout to ensure no lumps are present
  3. Cook corn meal for about 15 mins on medium heat
  4. Add spinach puree , salt and pepper. Mix well
  5. Add 1/2 cup cheese and minced garlic clove. Mix well
  6. When corn meal is cooked and sticky in consistency, switch off
  7. Add parchment paper to pizza pan . Add polenta or cooked corn meal on it and spread thin in circle on parchment paper
  8. Preheat oven to 190
  9. Add pizza sauce over polenta base evenly
  10. Sprinkle 1 cup cheese all over the base
  11. Place sliced onion, capsicum, tomatoes and grated broccoli randomly over base evenly
  12. Sprinkle remaining cheese on top
  13. Sprinkle chili flakes, salt and pepper
  14. Bake pizza for 15 to 20 mins until polenta crust is golden brown and crisp
  15. Allow to cool for 20 mins. Slice and serve
