ABOUT Avocado Pesto Stuffed Sweet Pepper Poppers RECIPE

A platter of Sweet Pepper Poppers compliments perfectly to the patio season, fresh breeze along with your favorite wine. The freshness of avocado, the just perfect Char-flavor of roasted roma tomatoes, mangoes and Fresh Hot Red Chilli stuffed inside these vibrant li’l sweeties and served with your favorite wine calls for an addicting appetizer treat.

Ingredients Serving: 6

  1. 1 pack Sweet Mini Pepper Mix
  2. 1.5 cups Cherry Tomatoes Slit in halves
  3. 1/2 cup diced mango
  4. 1.5 tbsp. chopped fresh rosemary
  5. 2 fresh Red Hot Chili Pepper chopped
  6. 1/2 cup Fresh Cilantro
  7. 2 Ripe Avocadoes peeled and sliced
  8. Salt to taste
  9. Olive oil 2 tbsp

Instructions

  1. Slice the stems off of the peppers and de-seed using a spoon.
  2. In a bowl, toss tomatoes, mango chunks, rosemary and red chili peppers with olive oil. Place it on a baking tray and roast veggies in oven for 4-5 minutes on 180 deg or roast it using a grill to get the Char-flavor.
  3. Once cooled, transfer into a blender along with cilantro and salt to make puree.Pesto is ready
  4. Mash the avocados and pesto until creamy. Add a pinch of salt. Mix well
  5. Using a big zip lock bag with the corner snipped off, pipe the mixture into mini sweet bell peppers .Serve as an appetizer or side dish along with wine or your favorite drink.
