Heat oil in a saucepan on med-high until bubbly.
Add garlic.
Once browned (about 1 min), add onion and chicken and sear for about 3-4 minutes.
Next, add soy sauce, vinegar, bay leaves, pepper, crushed red pepper. Cook for about 8-10 mins, stirring occasionally.
Add in the sugar and peanut butter. Continue cooking for about 6 more mins, constantly stirring until the sauce is reduced by half.
Total cooking time is about 20 mins. Serve with rice and enjoy!
