ABOUT SEMOLINA IDLY CAKE RECIPE

This idly cake is a baked two big discs of idlies in the microvave having layers of mint chutneys between the two discs...This is my own creative innovation specially for diabetic patients who want cake cutting ceremony but can not do ..as cakes are always sweet...Here is a savoury healthy cake for everyone basically .It is garnished with home made chutneys and shredded carrot ,cabbage and anar arils.Hope You would all appreciate this ...

Ingredients Serving: 4

  1. Hard Wheat Semolina 250 grams
  2. Fresh curd .500 ml
  3. Salt to taste
  4. Eno fruit salt sachet 1
  5. Mint leaves 1 bunch
  6. Peanuts roasted ..50 grams
  7. Green chillies .2
  8. Coconut fresh shredded..100 grams
  9. Chana dal roasted .50 grams
  10. Anar arils. 100 grams
  11. Carrot medium sized grated 1
  12. Gingely oil.1 tablespoon
  13. Chaat masala.1 tablespoon
  14. Tomatoes medium sized 2
  15. Cabbage small 1

Instructions

  1. Take the required amount of semolina and soak it in the curd for half an hour .
  2. The curd would get absorbed by the semolina .
  3. Add more curd and adjust it's consistency ..It should be like thick batter ..but not running thin . Add the required amount of salt to taste .Stir it ..At this stage add the Eno sachet stir it very lightly .. Grease the microwave safe rounded utensils and pour the batter in these two containers.
  4. Place the containers in the microwave ...one on the grill tray and one below it .
  5. Set it under ordinary microwave mode for 6 minutes approximately at power 1000 watts...
  6. After 6 minutes your idly discs would be ready....
  7. Keep it for cooling ... Demould after cooling.
  8. Meanwhile we have to make three chutneys for garnishing and mint chutney also for filling between the two idly discs.
  9. Method for coconut chutney .
  10. Take fresh coconut shredded..Also take roasted peanuts and pre roasted chana dal and green chilly one .
  11. Put everything in the grinder by adding salt too and make it into fine paste.
  12. Method for making tomato peanut chutney .
  13. Take deep red ripened tomatoes and peanuts . Make a fine paste in the mixer jar ..You can add gingerly oil also in the paste ...your chutney is ready .
  14. Method for making Mint chutney
  15. Wash mint leaves thoroughly....pour it in the mixer jar .Also add one green chilly and salt ..Add chaat masala too.Grind it into a fine paste..The chutney is ready.
  16. Now take the two idly discs which we had placed for the cooling ..Demould them ..
  17. Apply mint chutney between the two baked discs . Press with each other .
  18. Now we have to garnish the cake...
  19. Apply coconut chutney at the top surface of one of the disc facing us...
  20. On top of that give topping of tomato chutney .
  21. Now garnish with grated carrot , shredded green cabbage , anar arils in a row ...one can make any design of your choice...
  22. Your healthy beautiful Baked idly Savoury cake is ready to serve....
  23. You can keep it in the refrigerator and have later .
