Ingredients Serving: 5

  1. watermelon rind 2 cups
  2. sugar 1 cup
  3. cinnamon stick 1
  4. cloves 2
  5. lemon juice 2 teaspoon
  6. lemon zest 3 to 4 strips
  7. wheat flour 1 cup
  8. salt a pinch
  9. butter 1/2 cup
  10. cold water -to mix the dough

Instructions

  1. Remove the green skin from the melon and the red part of the melon leaving only the white part. Cut into small cubes.Add sugar (half of rind) to the bowl containing cubed rinds.
  2. Leave this for a few hours or overnight at room temperature.The rinds and sugar will develop a liquidy syrup and it took about 2-3 hours to develop.
  3. Set to simmer, stirring to dissolve all of the sugar and then add the remaining ingredients, the lemon juice,zest cinnamon stick and cloves.
  4. Simmer for 2 hours or more covered and reduce the syrup . It's done when the cubes become translucent.Cubes can be used as it is else make paste out of it using mixer.
  5. The rind paste /jam should be thick enough .
  6. You can add attractive food colors (optional) to the jam.
  7. clean the melon seeds. Strain water and spread it on paper. Better to Dry in sunlight.
  8. Take a pan and dry roast the seeds on medium flame.Dry roast it till the color changed.
  9. seeds can also be roasted in the oven at 325 degrees for 15-20 minutes. Allow it to cool completely before eating.
  10. Mix wheat flour,salt ,butter and cold water and make smooth dough out of it. let it rest for at least 2hrs. preheat oven for 20mins at 200 degrees.
  11. Roll the dough using roller and cut into circles using round cookie cutter.
  12. Grease pie tray with butter and place the shaped dough.
  13. Place the filling(melon rind filling) above the base dough. Top it with roasted melon seeds.
  14. Make strips using remaining dough and place it above the filling.
  15. Bake pie's for 20-25 min, until it becomes bubbly and golden.
  16. Remove pie's from oven . let it cool for 10 mins. serve it with remaining rind jam,seeds and homemade watermelon ice cream.
