ABOUT Brinjal paneer wrap in makhani gravy RECIPE

This is my own innovation in which marinated brinjal stuffed with paneer in makhni gravy. This is the best recipe for any party.It goes best with rice. Spice trail mix enhances its taste. It's simply delicious.

Ingredients Serving: 3

  1. Brinjal - 1 big size
  2. Onion - 1 medium size
  3. Tomato - 1 medium size
  4. Ginger - 1 tsp
  5. Garlic - 6 to 7 cloves
  6. Cashew nut - 6 to 7
  7. Almond - 3 to 4
  8. Melon seeds - 1 tbsp
  9. Paneer - 200 gm
  10. Curd - 3 tbsp
  11. Coriander powder - 1 tsp
  12. Garam masala - 1 tsp
  13. Red chili powder - 1 tsp
  14. Green chili - 2
  15. Genoa spice mix - 2 tbsp
  16. Whole some spices - badi ilaychi, black pepper,star anise
  17. Shezwan chutney - 1 tsp
  18. Salt as per taste
  19. Oil as required

Instructions

  1. First of all heat the pan and add some oil. I used mustard oil as it give smoky flavour to the dish.
  2. Add chopped onion to the oil. Now add ginger, garlic and green chilli. Cook for a min.
  3. After a minute add chopped tomatoes. Now put wholesome spices and cashew nut , almond, melon seeds. Let the gravy mix cook. In the mean while slice the brinjal lengthwise and put it into the water.
  4. Now make the marination for brinjal. Take the curd in the bowl and add Genoa spice mix and salt. Mix it well. Now take the brinjal slice and marinate it. Keep the slices aside for rest for some time.
  5. Now the makhani gravy mix is cool enough and let's grind it. After grinding strain it as you will get smooth gravy.
  6. After this step let's grill the marinated brinjal slice. If you have grill pan you can use that.
  7. Grill it from both side and keep all grilled slices in a plate.
  8. Now make the paneer stuff by adding Genoa spice mix. Add one spoon shezwan sauce to the paneer. Mix well.
  9. Now fill the prepared paneer stuffed in grilled brinjal slices. Wrap all of them.
  10. Now put the makhani gravy in pan and add all mentioned spices.
  11. Mix all spices properly. Cook it for 5 to 10 min.
  12. After some time add crumbled paneer to the gravy. Again cook for 5 min.
  13. Now add brinjal roll and serve it with hot chapati n rice.
