Just add grated Pumpkin and Sooji to your Leftover Rice and your yummy breakfast / snacks is ready.

Ingredients Serving: 4

  1. Leftover rice 1 cup
  2. Grated Pumpkin 1 cup
  3. Sooji 1 Cup.
  4. Ginger grated 2 tbsp
  5. Carrot grated 1/2 cup
  6. Coriander leaves finely chopped 2 tbsp
  7. Pepper powder 1 tsp
  8. Salt to taste
  9. Curd 1 cup
  10. Eno 1 pouch.
  11. Oil 2 tsp

Instructions

  1. Soak Sooji in minimum required amount of water.
  2. Grind Rice by adding little water.
  3. Add grated Pumpkin to it.
  4. Now mix this with Soaked Sooji.
  5. Add grated Ginger and Salt. Add grated Carrot to it.
  6. Add salt and Pepper powder. Batter should be of thick consistency. ( thicker than Pakora batter)
  7. Boil water in steamer.
  8. Mix Eno pouch with curd and add to the batter.
  9. Grease Idli moulds and pour batter in it.
  10. Steam for 10 minutes. Your quick Idlis are ready. Enjoy with Tomato ketchup or green chutney.
