ABOUT Veggie Pasta with creamy Cauliflower Sauce RECIPE

Pasta with rosemary sautéed veggies in a creamy cheesy sauce without any flour or butter or cream but with Cauliflower….perfect healthy Gluten free sauce for a Cauliflower shy family . If you add some Parmesan cheese to this sauce then it can be called a Cauliflower Alfredo.

Ingredients Serving: 4

  1. For the Pasta
  2. 2 cups Pasta of your choice (penne/fusilli/macaroni)
  3. 1 Cup button mushrooms,quartered
  4. 1 Cup Coloured bell peppers, diced
  5. 1 small sprig Rosemary
  6. For the sauce
  7. 3 cups Cauliflower florets
  8. 5-6 Cloves Garlic, crushed
  9. 3-4 Cups Vegetable stock or water
  10. 1/2 Cup Milk
  11. 1/2 Cup Cheddar Cheese, grated
  12. 2 tbsp Olive oil or Butter
  13. Salt and Pepper to taste

Instructions

  1. For the Pasta Sauce
  2. Fry the crushed garlic in the oil till light brown.
  3. Boil the cauliflower florets in the veg stock or the water with little salt for 8-10 minutes or till tender.
  4. Cool and grind the boiled florets with milk, 1 cup veg stock in which the florets were boiled, the garlic till smooth and creamy. If needed add more stock or water.The sauce should not be too runny or too thick.
  5. In a heated pan add olive oil ,sauce and the cheese and give a small boil till the cheese melts.Add salt and pepper as needed.
  6. For the Pasta
  7. Boil the Pasta as per the instructions on the pack, drain and show under cold running water, drain again and smear some oil on them so that they don't stick to each other.
  8. Saute the sliced bell peppers and mushrooms in a tbsp of oil or butter with a little fresh rosemary sprinkled on them for a minute and finally add some salt and pepper.
  9. To assemble the Pasta , arrange the boiled pasta on a plate, pour some creamy cauliflower Alfredo sauce on it,and finally add some rosemary sauteed veggies on it, sprinkle some grated cheese(optional) and serve.
