ABOUT Pumpkin Energy Bars flavoured with Pumpkin Pie Spice RECIPE

These are simple and easy-to-make energy bars to give you instant boost of energy. They are full of healthy ingredients that will suffice your daily intake of nutrients. Pumpkins are one of the best-known sources of beta-carotene. They are also high in potassium levels, vitamins and also contains antioxidants. Flax seeds are high in Omega-3 fatty acids and are also fiber-rich. These energy bars are flavoured with pumpkin pie spice mix that is nothing but a combination of a few basic whole spice powders - cinnamon powder, dried ginger powder, grated nutmeg and all-spice powder. Sometimes clove powder is also added to it. Major or say the highest portion in this spice mix is of cinnamon powder, followed by dried ginger powder and rest in small quantities.

Ingredients Serving: 4

  1. ½ cup pumpkin puree or 200 grams pumpkin, peeled and pureed
  2. 18-20 dates/khajoor, seeds removed and chopped
  3. 1 teaspoon ghee
  4. ½ teaspoon pumpkin pie spice*
  5. 15 cashew nuts, coarsely crushed
  6. 15 almonds, coarsely crushed
  7. 1 teaspoon sesame seeds/til
  8. 1 teaspoon flax seeds
  9. *For Pumpkin Pie Spice (yields about ½ teaspoon spice mix)
  10. 1/4 teaspoon cinnamon/dalchini powder
  11. 1/8 teaspoon sonth/dried ginger powder
  12. small pinch of freshly grated nutmeg
  13. small pinch of all-spice powder

Instructions

  1. For the Pumpkin Pie Spice
  2. In a small bowl, combine cinnamon powder, dried ginger powder, grated nutmeg and all-spice powder. Mix and set aside.
  3. For preparing Energy Bars
  4. Heat a non-stick pan and dry roast cashews and almonds. Set them aside to cool. Once cooled, grind them coarsely. You may also chop them.
  5. In the same pan, heat ghee and add pumpkin puree. Cook on a medium flame and saute for about 7-8 minutes or till all the excess moisture has been absorbed from the puree.
  6. Now add chopped dates and mix well. Cook for about 2-3 minutes or till dates become soft.
  7. Remove from flame and add coarsely crushed cashews and almonds, sesame seeds and prepared pumpkin pie spice. Mix well.
  8. Allow the mixture to cool a bit. Grease a small square tin with ghee.
  9. Pour the mixture on it and sprinkle flax seeds on it. Gently press with a spatula so that flax seeds gets stick to the bars.
  10. Refrigerate for about 1-2 hours or till they become firm.
  11. Once set, cut into long pieces or square pieces. This much quantity of ingredients will yield 4 bars. Quantity of ingredients can be easily doubled for making more number of bars.
