Edamame Salad

Ingredients Serving: 4

  1. 1 cup Soybean (edamame)
  2. 1/4 cup finely shredded carrot
  3. 1/3 cup finely chopped onion
  4. 1/3 cup finely chopped cabbage
  5. 1/3 cup sweet corn (I used frozen)
  6. 1/3 cup finely chopped fresh green grapes
  7. 1/4 cup finely chopped cucumber
  8. 1 clove of garlic (finely shredded)
  9. 1 tbsp olive oil
  10. A pinch of black pepper
  11. 1 tsp red crushed pepper
  12. 1 tsp cumin powder
  13. 1/2 tbls fresh lime juice
  14. 1 tbsp parmesan cheese (optional)
  15. Salt according to taste

Instructions

  1. Take a pot and pour in 2 cups of water. Add in a little salt and bring it to boil.
  2. Once the water starts boiling, add in the soybean and cook it for 2-3 minutes.
  3. Then drain the soybean and dump them on the paper towel. Pat them dry on the paper towel.
  4. Take a big mixing bowl. Add in the carrots, onions, cabbage, corn, grapes, cucumber, cilantro and garlic. Mix them all together.
  5. Add in olive oil, lime juice, black pepper, red crushed pepper, cumin powder and salt. Mix it well again. (You can also add parmesan cheese (optional) and mix.) Then add soybean and mix well.
  6. Serve soybean salad at lunch or dinner or to go.
