Ingredients Serving: 8

  1. Bhindi (small) — 300gms
  2. oil — 2tbsp + for frying
  3. Asafetida — 1/4 tsp
  4. Fennel seeds (saunf) — 2 tsp
  5. Raisins— 20 nos
  6. almond — 12
  7. cashew — 12
  8. Poppy seeds — 1 tbsp
  9. sesame seeds — 1 tbsp
  10. chilly powder — 1 tsp + 1 tsp
  11. salt — to taste
  12. sev (namkeen) — 1 cup
  13. maida — 1cup
  14. cornflour — 1 cup
  15. rice flour — 1cup
  16. club soda - 125ml approx

Instructions

  1. Trim and tail the Bhindi, Give a Slit.
  2. Make the stuffing. Heat a pan add very little oil. add asafetida fennel seeds, raisins, almonds, cashewnuts, almonds, poppy seeds and sesame. add sev and saute. Now add salt and chilly powder. Put in a blender and blend it while still grainy. This is the stuffing.
  3. Now stuff the bhindi with this stuffing.
  4. make the batter Combine cornflour, maida and rice flour. add salt and red chilly powder. pour soda water and make a thick batter.
  5. Heat oil. dip bhindi in batter and deep fry till golden.
  6. Take out on tissue paper. Serve hot with your favorite chutney.
