ABOUT Narali Bhat : sweet coconut rice RECIPE

Narali bhat is typically made on narali pornima that is rakhi in Maharashtra. It is traditionally made with rice, grated fresh coconut and jaggery. Sugar can also be used in case jaggery is not available. It tastes even better after prepared rice is kept for sometime to absorb sweetness from coconut jaggery mixture. However you need to be correct with proportions of each ingerdient so as to come with soft and fluffy rice.

Ingredients Serving: 2

  1. Long grain basmati rice 1 cup
  2. Grated fresh coconut 1 cup
  3. jaggery grated 1 cup
  4. Ghee 2 tablespoon
  5. Cloves 2
  6. Cinnamon stick 1/2 inch
  7. Chopped dry fruits almond, cashew, charoli 1/4 cup (as per choice)
  8. Poppy seeds/ khaskhas 1 tablespoon (optional)
  9. Resins 1 tablespoon
  10. Cardomom powder 1 teaspoon
  11. Nutmeg powder 1/2 teaspoon
  12. Saffron few strands
  13. Milk 1 tablespoon
  14. Water 2 cups
  15. Salt little to add in rice

Instructions

  1. Wash and soak rice for about 30 minutes
  2. Drain water from rice after soaking
  3. In a pan heat 1 tablespoon ghee. Roast clove and cinnamon stick and rice in ghee
  4. After 3-4 minutes of roasting rice, it will get coated with ghee. Add 2 cups water a little salt to taste and cook till rice is almost done.
  5. Meanwhile chop dryfruits, and dissolve saffron strands in lukewarm milk
  6. In a separate pan, heat another tablespoon of ghee and roast poppy seeds in it.
  7. Add chopped dry fruits and roast till slightly brown
  8. Add 1 cup grated coconut and resind and roast
  9. Add jaggery and keep on stirring till it melts and mixes well with coconut mixture
  10. Let the mixture cook for a minute
  11. Now by the time, check if rice is almost done. It is ok to keep it little uncooked as it will get further cooked in coconut mixture
  12. Add rice, cardomom, nutmeg powder and saffron dissolved in milk in coconut mixture
  13. Mix well gently so as to not break rice grains
  14. Cook covered on steam for 4-5 minutes or till rice is done. You may sprinkle a little water if you feel rice is too raw.
  15. Switch off flame. Keep covered for 15-20 minutes. Then take out in bowl.
