Ingredients Serving: 8

  1. Buns Ingredients:
  2. Wheat - 100 gms
  3. All purpose flour- 100 gms
  4. Chilli powder - 1 tsp
  5. Dry yeast - 1 tsp
  6. Green Chilli - 1 finely chopped
  7. Handful of coriander leaves finely chopped
  8. Butter - 1/2 tbsp
  9. Sugar - 1/2 tsp
  10. Salt - 1 tsp
  11. Bhaaji Ingredients:
  12. 2 medium sized potatoes peeled and diced
  13. 1 carrot finely chopped
  14. 150 grams peas
  15. 200 grams cauliflower chopped
  16. 3 medium sized tomatoes finely chopped
  17. 2 medium sized onions finely chopped
  18. 1 inch piece ginger finely sliced
  19. 2 green chilies finely chopped
  20. 1/2 teaspoon turmeric powder
  21. 1 teaspoon red chili powder
  22. 1 teaspoon garam masala powder
  23. 1 tablespoon fennel seed powder (saunf)
  24. 1 tablespoon lemon juice freshly squeezed
  25. 3 tablespoons butter
  26. 45 ml oil
  27. Handful of coriander leaves finely chopped
  28. Salt according to taste

Instructions

  1. Pour 1 cup of warm water in a bowl, mix in the yeast with sugar and salt. Keep this aside.
  2. Take a large bowl, put in the flour and wheat with 1/2 tsp salt. Add in the chopped coriander, green chillies, chilly powder and butter. Mix the flour mixture well, pour in the yeast water and knead into a smooth dough.
  3. Cover the dough with a wet cloth and keep it aside for 2 hours. After this time period, the dough will double in size. Punch the dough and knead it again. Divide the dough into 9-10 equal ball sizes. Brush these balls with melted butter.
  4. Next, place these balls on a baking tray with foil underneath. Keep it aside for another 30-40 minutes so that the dough rises.
  5. Preheat the oven for 10 minutes at 200 degree Celsius, then place this tray and bake for about 35-40 minutes. In the meantime, to prepare the bhaji boil all the listed vegetables with 1 ½ cup of water.
  6. Once these vegetables are soft, drain the excess water and mash them coarsely using a fork.
  7. Heat oil in a pan on a medium flame. Add in the onions, tomatoes, green chilies and ginger. Sauté and cook for 2-3 minutes until they become soft.
  8. Next add in the turmeric, red chili powder, fennel seed powder. Stir it well and put in the mashed vegetables. Stir and mash this vegetable mixture for 4-5 minutes.
  9. Put in the melted butter along with salt to taste, stir fry and cook for another minute. Then pour in ¼ cup of water or as needed, and let it cook for 1-2 minutes. Switch off the heat.
  10. Pour in the lemon juice along with garam masala and mix well.
  11. Serve the hot bhaji with the masala buns.
