Ingredients Serving: 5

  1. Ingredients for Onion Pakoda:
  2. 4 medium onions thinly sliced
  3. 3-4 tbsp or 1 small bowl chick pea flour
  4. 5-6 garlic
  5. 4 green chillies
  6. 1 tsp carrom seeds
  7. 1/2 tsp garam masala
  8. 1 tsp kashmiri red chilli powder
  9. 1/2 tsp turmeric powder
  10. Salt to taste
  11. 1/2 small bowl chopped coriander leaves
  12. oil to fry pakodas
  13. Ingredients for onion pakoda curry:
  14. 1 medium onion chopped
  15. 6 garlic
  16. 1 inch ginger
  17. 2 green chillies
  18. 10-12 curry leaves
  19. 1/2 tsp cumin seeds
  20. paste of 2 medium tomatoes
  21. Salt to taste
  22. 1/2 tsp turmeric powder
  23. 1 tsp kashmiri red chilli powder
  24. 1/2 tsp garam masala
  25. 5-6 tbsp oil
  26. 1/2 small bowl chopped coriander leaves

Instructions

  1. Recipe for pakoda: make dry paste of garlic and chilli
  2. in a mixing bowl add all the ingredients mix it well till all are combined nicely...no need to add water...salt will help onion to release moisture thus will help chickpea flour to bind...
  3. heat the oil in a frying pan.. take small portions of the mixture and fry the pakodas ona medium heat till golden brown in colour.
  4. after the pakodas are ready, add around a cup of water in the mixing bowl and keep it aside. the left over masala in the bowl will give a nice texture and great taste to the curry.
  5. Recipe for onion pakoda curry: make paste of green chilli, garlic and ginger.
  6. start to heat up oil in a pan. add the cumin seeds and curry leaves and let it splutter. add the green chilli, garlic and ginger paste. cook till the raw aroma diminishes.
  7. add the chopped onion. cook till it turns golden in colour. add the dry spices like turmeric powder, red chilli powder and garam masala. cook for 30 secs.
  8. add the tomato paste cook till oil starts the separate. add the water in the mixing bowl, add some more water till desired consistency. add salt to taste.
  9. once the curry starts to boil, add the onion pakodas, cover the lid and let it simmer for 3-4 mins. dont let the curry become thick as it becomes thicker as the steam subsides. garnish with green coriander leaves.. serve with roti or rice.
