This is my mom's favourite dish, made with onions & including the goodness of bitter gourds .

Ingredients Serving: 4

  1. Bittergourd i.e karele 250 gram
  2. Onions 3..4
  3. 1 Raw mango
  4. Oil 4 Tsp
  5. Fennel seeds ground 3..4 teaspoon
  6. Dhania [coriander] powder 2 teaspoon
  7. Salt 1and 1/2 teaspoon
  8. Turmeric powder 1/2teaspoon
  9. Red chilli powder 1 teaspoon
  10. Asoefodia 1/4teaspoon
  11. Cumin seeds 1/2teaspoon

Instructions

  1. Cut the karele in rings
  2. Chop onions and peeled raw mango together in chopper
  3. Heat about half the amount of oil in a wok.
  4. Add chopped karele in it
  5. Sprinkle half tsp salt in it
  6. cover it with a lid and lower the flame
  7. Cook for 5 minutes
  8. Now strain them and keep aside. Add the remaining amount of oil in the wok.
  9. Add heeng and jeera
  10. Add onions and mango paste
  11. Saute for 2 minutes
  12. Add cooked karele in it
  13. Again cook for 2 minutes
  14. Turn off the flame
  15. Serve hot with chapati
