This fusion pilaf which is spicy at same time has hint of sweetness from cranberries

Ingredients Serving: 5

  1. For Rice:
  2. 1.5 cup basmati rice washed and soaked
  3. 3 cups water
  4. 2 onions finely sliced.
  5. 1 tbsp ginger garlic paste
  6. 1 small tomato finely chopped
  7. 1 Stick Cinnamon
  8. 2 Cardamoms
  9. 1 small Star anise
  10. 1/4tsp turmeric powder
  11. 1 tsp coriander powder
  12. 1 tsp garam masala.
  13. 1 cube chicken stock cube
  14. 5 tbsp dried cranberries
  15. Salt to taste
  16. 3 tbsp + 1 tbsp refined oil
  17. 1 pinch saffron soaked in 4 tbsp warm milk
  18. 1/2tsp dry mint leaves.
  19. For chicken:
  20. 5-6 chicken legs
  21. 1 tsp ginger garlic paste
  22. 12 tbsp thick curd
  23. 1 tsp kebab masala
  24. 1 tsp roasted fenugreek leaves
  25. 1/4tsp turmeric powder
  26. 1tsp Coriander powder
  27. 1/4tsp Kashmiri chilli powder
  28. 1/4tsp roasted cumin powder
  29. 2 tbsp roasted chick pea flour
  30. salt as per taste
  31. 1 tbsp oil
  32. 3 tbsp butter

Instructions

  1. Marinate the chicken with ingredient mentioned and keep it aside for 4 hours.
  2. After 4 hours preheat oven to 200 degrees c and bake the chicken legs for 20 mins on both sides by basting butter in intervals.
  3. Reserve the remaining marinade.
  4. In a heavy bottomed deep pan heat butter and oil and fry cranberries and keep aside.
  5. Now add sliced onion and fry till golden brown.
  6. Next, add in ginger garlic paste and fry again.
  7. Once the raw smell goes off add tomatoes and add all spices and fry again
  8. Add remaining marinade and cook well.
  9. Next add water chicken stalk cube and boil it.
  10. Now add rice and saffron milk cover and cook till the rice is done.
  11. Mix the fried cranberries and dry mint leaves powder and fluff up the rice.
  12. For serving add rice and top with chicken leg and serve with chilled raita.
