Ingredients Serving: 2

  1. 1 Cup uncooked Rice
  2. ½ Cup Diced Pineapple
  3. 1 Onion
  4. ¼ Cup Diced Capsicum
  5. 2 green chilies
  6. 4 garlic pods
  7. 7 Cubes of Tofu or Paneer
  8. ¼ tsp Aamchur Powder
  9. 5 cashew nuts
  10. ¼ tsp Dark Soy Sauce
  11. ½ tsp Light Soy Sauce
  12. 2 tsp of oil
  13. A pinch of brown sugar
  14. 4 sprigs of Coriander leaves

Instructions

  1. The Preparation: Wash and Cook rice with water in 1:2 ratio and allow it to cool down.
  2. Chop the onions. Cut the chilies into thin rings. Roast the Cashew nuts. Wash and fry tofu/paneer pieces. Finely chop the Garlic pods.
  3. In an iron wok, add Oil, then add garlic pods. Give a toss and then add onions and saute on high flame for a minute.
  4. Then add green chilies, Keep stirring for a minute.
  5. Next add capsicum and keep stirring for couple of minutes, the add pineapple pieces.
  6. Add light & dark soy sauces and brown sugar, after a stir add the cooked rice. Towards the end add the amchur powder and salt.
  7. Remove from heat and serve garnishing with coriander leaves.
