ABOUT Lemon Butter Garlic Pan Seared fish RECIPE

This is a beautiful succulent, juicy, yet crispy fish taught by my mentor Vikas Sir that's served in restro style, but you can easily make it at home.

Ingredients Serving: 3

  1. I). FOR THE SEARED FISH
  2. Big squares of Boneless Surmai or Singhara: 750 gms
  3. Vinegar: for washing fish
  4. Oil: 4 tbsp for saute and marinade
  5. Salt: as per taste
  6. Pepper: 1 tsp
  7. Oregano: 1 tsp
  8. Parsley: 1 tsp
  9. II). FOR THE LEMON BUTTER SAUCE
  10. Cold butter cubes: 100 gms
  11. Finely chopped garlic : 4
  12. Lemon juice : 2

Instructions

  1. FOR PAN SEARED FISH
  2. Take boneless big filets. To remove raw smell of fish, then just pour some Vinegar on fish and leave it for 15 min. Wash and pat dry
  3. Pour few drops of oil on fish, Sprinkle salt, pepper and oregano on both sides.
  4. Next, take oil in non stick pan, and sear the fish 3-4 mins each side (if possible twice). Your fish is ready.
  5. For the Lemon butter sauce (Cook side by side):
  6. Take another pan, add 100 gms cold butter
  7. Don't let melt completely, add coarsed garlic
  8. Let it cook, but not much
  9. Add lemon juice and switch off the flame
  10. Drizzle this sauce on Seared fish.
  11. Serve immediately.
