A very light potato curry to enjoy with hot steamed rice , when you want to make something very simple , tasty and needs less ingredients . Everyone likes potato , after all it is the king of the vegetables

Ingredients Serving: 4

  1. Baby potatoes 20
  2. Ginger Paste 1 Tsp
  3. Lemon juice 1 1/2 tsp
  4. Green chilli 3_4
  5. Red chilli powder 1/2 tsp
  6. Ghee 1 tsp
  7. oil 1 1/2 tsp
  8. Panchphoron 1 tsp
  9. Water 1 cup
  10. Turmeric powder 1/2 tsp
  11. Cumin Powder 1/2 Tsp

Instructions

  1. Wash and peel sweet potatoes
  2. You can cut little big sized potatoes into halves
  3. Now pressure cook with salt for 2 whistles
  4. Keep aside for some time to release the pressure naturally
  5. Heat oil + 1/2 tsp ghee in a nonstick pan
  6. Add panchphoron , saute for 1_2 mins
  7. Add ginger paste , saute 2 mins
  8. Next add baby potatoes , green chilli , saute for 3_5 mins
  9. Add turmeric powder , cumin powder , salt and chilli powder
  10. Add little water , saute for 5_6 mins
  11. Add warm water , and cook 10 15 mins
  12. Add lemon juice , check for salt and chilli , adjust them , if you want add 1 tsp sugar
  13. Add 1/2 tsp ghee
  14. Switch off gas
  15. Serve hot with rice
