ABOUT Water Chestnut and Olives mixed Salad RECIPE

This is a nutritious as well as tasty salad with two unique ingredients, water chestnut and olives. Goodness of sprouts, fresh vegetables and peanuts with a tangy taste of raw mango mixed with pepper and herbs in one bowl. It makes a perfect bowl for those on diet and variation in routine salad for a full course meal.

Ingredients Serving: 2

  1. Sprouted moong 1 tablespoon
  2. Sweetcorn kernels 1 tablespoon
  3. Tomato one small chopped fine
  4. Onion one small chopped fine
  5. Cucumber one small peeled and cut
  6. Chopped cabbage 1 tablespoon
  7. Grated raw mango 2 teaspoon
  8. Peanuts 1/4 cup
  9. Grated coconut 2 teaspoon
  10. Black Olives 5-6 cut
  11. Water chestnuts 8-10
  12. Mint and coriander leaves cut 1 tablespoon
  13. sugar 1/2 teaspoon
  14. Chilly flakes 1/2 teaspoon
  15. Chat masala 1/2 teaspoon
  16. Black salt and regular salt to taste
  17. Garlic powder and mixed herbs 1 teaspoon

Instructions

  1. Boil sprouted moong and corn kernel in microwave for 90 seconds
  2. Add chopped tomato and crushed curry leaves
  3. Add chopped onion
  4. Add chopped cucumber
  5. Add chopped cabbage
  6. Add grated raw mango
  7. Add peanuts
  8. Add grated fresh coconut
  9. Peel water chestnuts
  10. Take white portion
  11. Cut them into pieces and add to salad
  12. Add coriander and mint leaves, sugar, chilly flakes, chat masala, herbs and garlic powder
  13. Add chopped olives
  14. Mix well and keep for 15-20 minutes before serving so as to marinate the spices well
