Ingredients Serving: 4

  1. 1 Cup cashews
  2. 1 cup dates pitted (soak for half an hour in water)
  3. 1 tbsp Vanilla Extract
  4. a little pinch of cinnamon for taste
  5. A pinch of salt
  6. 3 tbsp cocoa powder

Instructions

  1. In the bowl of a food processor, pulse the nuts until finely chopped.
  2. Add in the dates, vanilla, salt, cinnamon powder & cocoa powder & pulse until everything is incorporated.
  3. The mixture should stick together when pressed between your fingers. (Depending on the softness of the dates you may need to add more at this stage)
  4. Roll into balls & store in the fridge or freezer
