ABOUT Black - eyed beans salad with homemade dressing RECIPE

A palatable and healthy recipe which is a combination of vegetables and Black eyed beans. Both gives protein, vitamin and minerals which are very important for kids.

Ingredients Serving: 3

  1. 11/2 cup - blackeyed beans boiled
  2. 1 1/2 cup - lettuce chopped
  3. 1/4 cup - zucchini finely chopped
  4. 1/4 cup - bell pepper finely chopped
  5. 1/4 cup - onion finely chopped (optional)
  6. 1/4 cup - carrot finely chopped
  7. 1/4 cup - tomato finely chopped
  8. Dressing: 1/4 cup - cilantro finely chopped
  9. 1 1/2 tbsp - yogurt or curd
  10. 1 tbsp - lemon juice
  11. 1/2 tbsp - honey
  12. 1/2 tbsp - cheese
  13. 1/2 tbsp - extra virgin olive oil
  14. 1 tsp - roasted cumin powder
  15. Salt and Pepper as per taste

Instructions

  1. Heat some 1 tbsp oil in a wok, add zucchini, bell pepper, onion and carrot.
  2. Saute for 2-3 mins. Add salt and black pepper powder, mix well.
  3. Add all the dressing ingredients in a bowl and mix well.
  4. Take another bowl, spread lettuce then spread black eyed beans. Add the sauted vegetables, tomato and cilantro, mix well.
  5. Add dressing, toss gently and serve.
