ABOUT Stuffed Caterpillar Bread RECIPE

Presenting my Freshly Baked Caterpillar Bread stuffed with Potato-Cheese masala and served with Tomato sauce.

Ingredients Serving: 4

  1. For dough
  2. 1 cups Multi-grain Flour
  3. 1 cup Semolina
  4. 1 cup All purpose floor
  5. 1 tsp Baking powder
  6. 1 tsp active yeast
  7. 1 tsp sugar
  8. 1 cup warm water
  9. 1 cup milk
  10. Water for kneading
  11. For stuffing
  12. 3 boiled and mashed potato
  13. 1 cup cottage cheese
  14. 1/2 cup boiled peas
  15. 2 medium onion – sliced
  16. 1 capsicum – sliced
  17. 1 tomato – sliced
  18. 1 cup Green corriander leaves – chopped
  19. 1 tsp ginger garlic – chopped
  20. 1 tbsp Garam Masala
  21. 1 tsp turmeric powder
  22. 1 tsp Kashmiri Lal Mirch
  23. 1 tsp amchoor powder

Instructions

  1. For dough
  2. Dissolve sugar in the warm water and add yeast. Mix lightly and let it prove for 20 mins.Sieve the flours + semolina + salt together.
  3. Add 1 tbsp olive oil.Knead it well using yeast water and warm milk. Add more water if required. Once kneaded, brush it with olive oil and let it rest for 45 mins.
  4. Dough will be doubled in it’s size. It’s ready. Give it a knead one more time and let it rest for another 30 mins. It’s good to go now!
  5. For Stuffing
  6. Prepare simple stuffing by mixing all the ingredients together. Fry onion in a pan along with ginger and garlic. Add peas and capsicums. Add spices.
  7. Put mashed potato and Cottage cheese. Mix well.
  8. Add lot of tomatoes and salt. Let it simmer.
  9. Fry well. Add coriander leaves.Stuffing is ready.
  10. Now, divide the dough into 2 equal parts.
  11. For Caterpillar bread
  12. Roll out one dough and put the stuffing on one side of the rolled dough. On the other side make equal sized slits. Roll it out and arrange it so that slits are over the rolled piece. Caterpillar bread it ready.
  13. Now, let it rest for 15 mins.
  14. Bake it well at 160 degrees. Bake for atleast 20-25 mins.
  15. Keep brushing it with a mixture of butter and milk. This will give extra shine and crunch to the bread.
