Ingredients Serving: 5

  1. 2 tbsp ghee/oil
  2. 2 medium onions, chopped
  3. 2 carrots, diced
  4. 2-3 garlic cloves, crushed
  5. 1 tsp cumin powder
  6. 1 tsp black pepper powder
  7. 2 tbsp fresh turmeric, grated
  8. 1 tbsp ginger, grated
  9. 1 tsp salt or as per taste
  10. 2 cups pumpkin, diced
  11. 1 Cup Coconut Milk
  12. water or vegetable stock, as required
  13. 1 tbsp toasted pumpkin seeds, to garnish
  14. 1/2 tsp red chilli flakes, to garnish
  15. some parsley, to garnish

Instructions

  1. Heat a large and deep pan and add ghee in it.
  2. Add onion and saute till pink.
  3. Add garlic, ginger. Add cumin powder and saute lightly.
  4. Season with salt and pepper.
  5. Add the diced carrots, turmeric and pumpkin. Saute for 10-12 minutes until the pumpkin and carrot begin to soften and caramelise on the edges.
  6. Add the coconut milk and vegetable, ensure that the vegetables are completely submerged.
  7. Cook it on medium/low heat for 20 minutes.
  8. Once the pumpkin and carrots are soft, blend them using a hand blender until smooth.
  9. Adjust the thickness, add more water/stock, if required.
  10. Garnish with toasted pumpkin seeds, chilli flakes and some parsley.
