Ingredients Serving: 2

  1. 250 gms - bottlegourd
  2. 250 gms - milk
  3. 2 tbsp - melted ghee
  4. 1 tbsp - khoya/mawa
  5. 50 gms - sugar
  6. Pinch of Cardamom powder
  7. 8 - 10 Cashewnuts
  8. 8 - 10 almonds
  9. Raisins and pistachios
  10. Melon seeds or Pinenuts (optional)

Instructions

  1. Heat ghee in a heavy bottomed vessel.
  2. Add the dry fruits, cashew nuts, almonds and others and fry them.
  3. Take out and keep aside.
  4. In the same vessel add ghee, add washed, peeled and grated Bottlegourd (ghiya).
  5. You can squeeze out the water of ghiya after grating it. Though I haven’t.
  6. Saute the grated bottle gourd in ghee for a few minutes and add Milk.
  7. Keep stirring on a low flame. When it has almost dried, add khoya, sugar and cardamom powder and half of the nuts that we had fried.
  8. Continue stirring till it completely dries up and ghee would float and the aroma of prepared halwa will refresh the air.
  9. Garnish with the rest of nuts and serve hot or chilled as you prefer.
