Ingredients Serving: 3

  1. One cup of all-purpose flour
  2. 100 gm of unsalted butter (room temperature)
  3. 1/4th cup of cocoa powder
  4. 1/2 cup of brown sugar
  5. 1/2 tablespoon of baking powder
  6. 1/4 tablespoon of baking soda
  7. 100 gm of sour cream
  8. One teaspoon of vanilla extract
  9. A pinch of salt
  10. Raspberry Cream cheese filling: 50 gm of unsalted butter (room temperature)
  11. Raspberry Cream cheese filling: 70 gm of cream cheese (room temperature)
  12. Raspberry Cream cheese filling: 200 gm of icing sugar
  13. Raspberry Cream cheese filling: ¼ cup frozen raspberries

Instructions

  1. Pre heat the oven at 180 C and line a baking tray with parchment paper. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda and salt and set aside.
  2. In another bowl, beat the butter and sugar together until light and fluffy. Add vanilla extract and beat well. Now alternately add the dry ingredients and sour cream. Fold in all the ingredients and mix the batter well.
  3. Fill the batter in piping bag, and pipe it out in heart shape on the prepared baking tray – spacing about 2 inches apart. Smooth out the tops with a wet finger. Bake for about 9 to 10 minutes. When done place on the wire rack to cool.
  4. In a mixing bowl, beat the softened butter and cream cheese together using an electric hand mixer until soft and fluffy. Gradually beat in the sugar and continue to beat until soft and creamy.
  5. In a small bowl, mash frozen raspberries with a fork, and then add it to the cream cheese mixture. Keep the prepared filling in the fridge.
  6. Sandwich the raspberry cream cheese filling with the whoopie pies.
